Back on topic, people.
Here's my list of models I've done and found hard/annoying. My opinions, so take them with a grain of salt. (For those of you who aren't English-speaking, that means "that's just what I think and you can think differently")
Multibeam Frigates -- small, so it gets to be a pain to assemble without gluing your fingers and getting it all soaked in glue.
Kadeshi Needleship -- it's very confusing because it involves parts that bend inward and then parts that connect to that without flaps and...it annoyed me.
Naggarok -- I can say this because I modeled it myself. The cannon is a pain to construct. I'm planning to correct it when I can.
As for my ships, I'll do some shameless self-promotion. Try the Turanic cruiser, unless you don't want mod ships. The arrays take uber-glue to hold them straight while they dry, but the rest of the ship isn't hard to build. Aside from mine, I'd recomment the Kadeshi Multibeam Frigate, the Taiidan frigates, the Archangel (Trust me. I made it. Compared to most of the models, it's BIG and BIG means easier to put together. Just follow my graphic AI's and you're fine).
I don't know what defines easy, anyway. I think most of the models are easy, because it's not like I can't figure out how to put them together. The only hard model, to me, was the Beast Mothership, and that's why Ent-E threw it out.
I'd go for ships you like rather than easy ships, but that's just me.

Thats probably why I built so many Quaar Jets to begin with! Not just that I liked them but they were also (reasonably) easy.
