You can download meshes for all HW2 ships at the HW2 Unit Stats site - so you don't need the game but without it I don't know if you can do different colours.
Also Fructose noted that the meshes at the Stats site are harder to work with than those extracted from the game.
Without Deep Ex or an equivalent you can't convert the game files in .cob format.
Metasequoia is free. The link is at Fructose's site. You have to have that the re-model the mesh and then convert to .pdo which is the pepakura file format and which lets you unfold the model.
What I suggest is that you download and save the metasequioa and the demo programe for Pepakura via Fructose site, I'm sure someone can e mail you a file with an extracted mesh in .cob format.
Have a play with the meta and pepa programmes and see how it goes. Its a case for most people of learning to walk before they run (or in my case stumble as I'm nowhere near running yet).
